Spice Rubbed Pork Loin

Have you ever had one of those months where you feel like you just can’t catch up? Boy have I had one of those months. I have had so much stuff to do and so little time to do it in. The fact that February has 3 less days than every other month doesn’t help anything either.
I don’t know about you, but when I’m rushed I just want to find the easiest thing for me to throw together and get it on the table. So, this week will be Pork Week. Last night, I made this DELICIOUS 3 1/2 lb pork loin for dinner ( recipe to follow) with the plan to use this cut of meat for the next 2 or 3 nights of dinner. I’ll be re-inventing the pork loin for each meal so that I’m not eating the same meal twice. So, stay tuned and come back tomorrow to see whats for dinner!

Spice Rubbed Pork Loin

1 T curry powder
2 t. cumin
1 t. salt
1 t. cinnamon
olive oil
1 pork loin ( 3-4 lbs)

Mix spices together in a small bowl. Add just enough oil to make a paste. Rub all over pork loin.
Roast in a shallow pan, at 350 for 50 minutes or until temperature reaches 160 degrees. ( Loin takes 20 minutes per pound to cook, so adjust according to the size of your meat)
