 This Lemon Asparagus Cheese Spread is dangerously addictive. Full of bright lemon flavor and a delicate asparagus notes, this cheese spread will be gone before you know it! Whip some up for a snack or as a party dip! It will keep in the fridge for a week or so.

I love small towns. Don’t you? I don’t mean “small” as in there is only one Walmart and 20,000 residents. I mean “small” as in there is only one high school for the town of 3000 and you have to watch who you date because you might be related. 

 
I have found that places that small are chocked full of talented people. I think it has to do with the lack of “stuff” available. If Necessity is the mother of invention, then prolonged Necessity is the mother of a finely honed skill. This is something that I have noticed since moving back to my hometown.
 
Our town is not a small town…it’s more like a quaint village. The biggest grocery store is the Save – A – Lot, and the best place to shop for anything that isn’t chicken feed or baling wire is the Dollar General Store. The farmer’s at the farmer’s market still sell produce by the bushel, and the neighbors have chickens in their yard. The best place to go swimming is the creek. It’s also sometimes the best place to take a bath.
 
Anyway, you get the point…it’s small. But even in small towns, you can find talented people who create amazing things.This town is chocked full of amazingly talented people. Everything from master woodworkers, writers, artists, community organizers, chefs, teachers, and farmers.
There are also quite a few amazing cooks here. My friend, Maria, is one of them. She’s been retired for a couple of years now, but she used to make the most amazing cheese spreads every week. We sold them at the winery for a while and they were always a big hit. That’s where this Lemon Asparagus Cheese Spread came from. It’s one of Maria’s ideas. I never got the exact recipe from her, but after I sat and ate an entire tub of her version all by myself a few years ago, I took a look at the label and came up with my own version.
 
The great thing about Lemon Asparagus Cheese Spread is that it’s dead simple to put together and it keeps in the fridge for the whole week. So, if you’ve got a busy week and a party at the end of it, feel free to make this up way ahead of time and save yourself a little time. Or just make yourself a big batch for snacking on, it won’t last long. I promise
 
Cook the asparagus in water until softened, about 5 minutes.
 Place asparagus in a food processor or blender and pulse until pureed. Add in the butter and pulse again.
 
Zest the entire lemon 
and place in a mixing bowl with the paddle attachment. Add in the rest of the ingredients 
and beat until well combined. Use half the juice of the lemon to the mixture and beat again.
 Adjust the seasoning to taste. Store in the fridge until ready to serve!

Ingredients

  • 5 stalks of fresh or frozen asparagus , trimmed
  • 1 lemon
  • 1 package cream cheese
  • 1 T unsalted butter
  • 1/2 t . white pepper
  • pinch of cayenne
  • salt to taste

Instructions

  • Cook the asparagus in water until softened, about 5 minutes.
  • Place asparagus in a food processor or blender and pulse until pureed. Add in the butter and pulse again.

    More lemons? Stop please, I can't handle it. Asparagus and lemons are so good together. I added mushrooms to the mix and made a great risotto last week.

    I would have never guessed the secret ingredient is asparagus. A nice way to enjoy the spears, too, when they are no longer in season, fresh in the produce bins.
