I am the world’s most forgetful person. I often forget to buy gifts, groceries, or toothpaste. Doctor’s appointments and haircuts are nearly always forgotten and I almost always forget to pick up anything that I have already paid for. I also forget to call, write, or generally keep up with people that I know. (Thank goodness for email)  I will probably forget to show up to my own funeral. It’s not that I don’t want to do any of these things (except for the funeral…that can wait), I just forget. I blame it on an unorganized filing system in my brain and I am working very hard to fix it.

Anyway, it would make sense that if I were invited somewhere for a big dinner, I would forget to buy groceries to make something to bring. And I probably wouldn’t remember until it was almost time to leave, meaning that I would have to frantically dig through my kitchen shelves looking for something that says, “I swear I didn’t throw this together at the last minute! I totally meant to make this dish for you!” and be convincing.

Enter the cheese ball. Everybody loves them, they don’t require any cooking, and they come together really quick. Slap a cheese ball and a pack of crackers on a plate and you’ve got a party and no one will know that you nearly forgot.

The best way to store these cheese balls is to wrap them tightly in plastic wrap and keep them in the fridge. If you decide to roll any of your cheese balls in parsley then you should wait to do that on the day of your party. THat way the parsley won’t get all gross.

Three Cheese Balls

Cheddar Bacon Cheese Ball, Lemon Rosemary Goat Cheese Cheese Ball, and Blue Cheese and Cranberry Cheese Ball. Make one or make them all! 
The base ingredients are for one cheese ball.

Ingredients

  • 8 oz. package cream cheese softened
  • 2 T butter
  • 2 T milk
  • ½ t. salt
  • ¼ t. pepper

Cheddar & Bacon

  • 2 T chopped green onion
  • ½ cup chopped cooked bacon
  • 1 c. shredded cheddar
  • 1 t. Worcestershire
  • ¼ t. garlic powder

Blue Cheese & Cranberry

  • ½ cup shredded cheddar
  • ½ cup crumbled blue cheese
  • ½ c. dried cranberries
  • 1 T chopped parsley

Lemon Rosemary & Goat Cheese

  • Omit Milk
  • 4 oz. plain goat cheese
  • 1 t. lemon zest
  • 1 T lemon juice
  • 1 T fresh rosemary chopped
  • 1 t. paprika

Instructions

  • Combine ingredients in a mixer until whipped and fluffy, then add the flavor combination of your choice below. Shape each cheese ball, wrap in plastic wrap and refrigerate for at least an hour. Then roll each ball in minced parsley, sesame seeds, or chopped walnuts and cranberries. Store in the fridge for up to a week. Serve with crackers.
